As I never own a new bike before I'm a bit confused about the first service. The bike is approaching 2 months soon but I have only done 200 miles on it. In the manual it says that the first service should be done at 600 miles (1000 km) or at 2 months, whichever comes first. My question is, should I do the first service now even with 200 miles? Or should I wait (maybe) another 3 months to hit 600 miles? What will be the best?

I'd say go put 400 miles on it today and go get the service tomorrow  If you have a warranty on the bike then consult the dealer you purchased from and ask them. I don't like to mess around when it comes to warranties because if something happens and they find evidence you didn't follow the suggested maintenance path you may be left high and dry. In the end it's probably just fine to let it go out to the 600 miles.

Yes I do have a warranty which I would like to maintain. Already used it once so far...the headlight cracked on the first 10 mile ride and apparently it was a defective glass which they have replaced. I will ask the dealership but my worry is they will just book me in now so they get some clients to pay some ridiculous prices for the "authorized" dealership status. In UK we are entering the quiet period (getting colder and miserable weather).

I sucked it up and took my bike in to the dealer for the first service just to have a professional give it a once over. I'm fairly decent as basic mechanical stuff and now with 9,000 miles I've done all my own work other than the first service and installing new tires. When I hit a major service again I'll take it back and have them do their thing again and just accept for couple hundred bucks cost as a "investment in the bikes future". I suppose that's a bit of an exaggerated way of looking at it but it's how I justify it.
If you do your own services on it just keep details records, receipts, etc. and you should be fine. Things like your headlight cracking don't happen because you didn't take your bike in for the first service on time, lol. But if you neglect oil changes for X amount of time and crack a piston then, you might be on your own.

I'd say wait until the 600 miles are up and get out on the bike whenever you can

Suck it up buttercup! Put on some coveralls and go ride that thing for a afternoon. Put some miles on her and get the service done. Did you buy it to ride it or look at it? Waiting to 600miles would be fine unless it's like 10 months to go 600 miles.
On a side note coming from someone who works at a powersports sports dealer. If you do your own work you MUST use oem parts for the warranty to be valid, and have receipts. With that said, it also is up to the dealer to decide whether or not they will go to bat for you. Meaning you bought the bike from them and they never saw you again to the last day of your warranty and your motor is toast, with 15,000 miles and you bought all your parts online to save money, they will be more likely to NOT got to bat for you at all, they will do the minimum.
The opposite side of that is you buy your bike and got your first service done with them, buy oil filter crush washer etc. from them every so often. Maybe buy a set of gloves or something cheap whatever it may be when you stop in. Last day of warranty you bring your bike in and they will be much more inclined to help you and go to bat for you. You have built some sort of relationship with said business and have a history of sales through them.
I see it almost everyday, we get people that price shop us to death wear our salesman out and then buy from somewhere else to save a $100 , and then complain about how long our service back log is. Simple we bump our customers that bought from us right to the front. You didn't buy from us you get to the back of the line.
